What Is an Organic Latex Mattress?

A latex mattress is made from the natural sap of the Hevea brasiliensis rubber tree — a renewable resource harvested sustainably, primarily in Sri Lanka. When that latex is certified to the Global Organic Latex Standard (GOLS), it means the entire supply chain has been independently verified: from the plantation to the processing facility to the finished mattress in your bedroom.

Not all latex mattresses are equal. There are three types on the market:

100% Natural Latex is pure tree sap with no synthetic additives. It's what we use at Zentai. It's the only type that can carry GOLS certification.

Blended Latex mixes natural rubber with synthetic SBR rubber derived from petroleum. Many mattresses marketed as "latex" or even "natural latex" in Australia are blended. Blended latex cannot achieve GOLS certification.

Synthetic Latex is made entirely from petrochemicals. Despite the name, it shares little with natural latex beyond its feel.

The certifications tell you which you're getting. GOLS certification — issued by Control Union, an independent third-party body — requires that the latex content is at least 95% organic. Oeko-Tex Standard 100 and ECO Institut testing verify that the finished mattress contains no harmful chemicals or emissions. If a mattress cannot show you these certificates with verifiable registration numbers, it's worth asking why.

How We Make Our Mattresses

Every Zentai organic latex mattress begins as liquid sap — tapped by hand from rubber trees on GOLS-certified plantations and shipped to our production partners, who use the Dunlop process to transform it into solid latex cores.

In the Dunlop process, fresh latex is poured into moulds, vulcanised with steam heat, and set into a dense, consistent core. This process preserves the natural properties of the latex and avoids the chemical treatments required in some alternative production methods. The result is a heavy, durable, and genuinely organic material.

The cores then come to our Byron Bay workshop, where our team assembles each mattress by hand. Depending on the model, layers are combined to achieve the target firmness profile — a softer comfort layer over a firmer support core, or a single-firmness design for those who prefer a more consistent feel. The latex is enclosed in a cover made from, chosen for breathability and natural fibre credentials.

Before any mattress leaves our workshop, it is checked against our quality standards. We have been doing this in Byron Bay for over 44 years. It is not a process we have outsourced or automated.

What is the difference between Dunlop and Talalay latex? Both are processes for manufacturing natural latex cores. Dunlop is the traditional method: latex is poured into a mould, vulcanised, and set. The result is a denser, more supportive core that suits most sleepers well. Talalay involves a more complex process — the latex is poured, frozen, and then vulcanised — producing a lighter, more consistent cell structure that some sleepers find softer. Zentai uses the Dunlop process, which we have found to produce the most durable and consistent results for Australian conditions.
